Method
- Brew the espresso or coffee in any preferred way. Allow it to cool.
- Whisk or mix the cream until it reaches a creamy consistency.
- Whisk the egg yolk in a separate container.
- Combine sugar and water in a saucepan. Place it over the heat, bring it to a boil, and cook until it thickens.
- Pour the hot sugar syrup into the egg yolk mixture while continuing to beat.
- Pour the cooled coffee and cream into the sugar-egg mixture. Mix everything well once more and refrigerate.
- After 30 minutes, remove from the refrigerator and whisk again.
- Divide into glasses and top with chocolate pieces.
