Method
- Brew the espresso or coffee in any preferred way.
- Pour the cognac into a heatproof saucepan. Add the apple peel, fruit zest, cloves, cinnamon stick, and 1 lump of sugar.
- Heat the mixture until it is hot.
- Scoop some of the hot liquid onto a spoon and soak the remaining sugar lump with it.
- Light the soaked sugar lump on fire.
- Drop the burning sugar lump into the saucepan to ignite the rest of the mixture.
- Allow the mixture to burn for about 1 minute, stirring continuously.
- Pour the mixture through a sieve into a serving glass containing the coffee.
