Method

- Place cardamom in a saucepan and add water. Bring it to a boil and heat over low heat for 5 minutes.
- Let the infusion cool naturally (or in the refrigerator) for 1 hour.
- Strain through a fine sieve and heat.
- Use the cardamom infusion to brew the coffee in any preferred way.
- Place ice in a tall, heat proof glass.
- Pour hot coffee over the ice cushion.
- Garnish with pineapple and cherries.
