Method
- Remove the cherry pits, fill the berries with water, and simmer over a low heat for around 10 minutes. Allow it to cool
- Return the cherries to the heat, add 1 tablespoon sugar, stir constantly, and bring to the boil. Remove from the heat and allow to cool.
- Dilute the syrups with cold water in a 1:1 ratio, pour into ice cube trays, and freeze.
- Strain the cherry infusion through a sieve and pour it into ice cube trays. Freeze.
- Brew the espresso or coffee using the preferred method. Allow the beverage to cool.
- Place the fruit ice in the serving glass and pour in 1/2 of the coffee.
- Top it up with the remaining berry infusion.
